Simple bean salad

Dried white beans, soaked overnight then simmered
Red and yellow peppers
Celery
Red onion

Tossed with olive oil, lemon juice, salt & pepper, plus some basil (just because I had some, but I bet cilantro would be good, too). Enjoy!
